The grapes come from a vineyard which has not been treated with chemicals in the pas two years before the harvest. After harvesting the grapes in perfect condition, they were freed from the panicles and they had undergone a very long, 45-day maceration, in which the mash was pumped regularly over the on top swimming grape skins. Alternatively the floating skins were pushed into the mash to achieve a complete extraction of the graapes ingredients. This procedure is called "pigeage" in France. After a several months long maturation and a slight filtering, this "almost organic wine" was then bottled.
