Organic wine - processing, Evaristiano Isola dei Nuraghi IGT, organic wine, white, bag in box, 5 l

This white organic wine is made from the Nuragus grape variety, which is produced in a 2 hectare vineyard on the Campdanus plain. The soil there is loamy and fertile, so that the amount of harvest must be reduced by pruning and the so-called green harvest. The vines are planted at a distance of 2.5 m by 0.80 m and raised in the Guyot style. They stand individually in rows, but not on a trellis (wire training). Four branches of the vines strive upwards in a funnel shape and can thus optimally absorb the sun's rays. This type of vine training is not suitable for grape harvesting by machines, it requires harvesting by hand.

The grapes are harvested manually in the middle to the end of September, pressed immediately after arrival in the cellar and fermented with the grape's own yeast at a constant temperature of 15 ° C. Maturing on the fine yeast for several months with regular batonnage stabilizes the wine and increases its taste intensity.
