Five high-quality grape varieties give this Cuvée Bodega Saavedra, Afortunado, Flor del Amanecer their color, their typical scents and aromas in a balanced relationship that leads to a harmonious, fine organic wine.

 

Organic wine - profile

  • Colour: dark strawberry red
  • Nose: Garnacha, Cabernet Sauvignon, Syrah and Tempranillo varietals contribute to these alluring scents of fresh, red berries from the garden and forest (strawberry, raspberry, blackcurrant, blueberry) with hints of violet and liquorice).
  • Mouth: this Spanish wine also offers a whole potpourri of flavors on the palate, and at the end fine tannins for a firm structure.
  • Drinking recommendation: You can enjoy this red organic wine now or until 2025. If you like it smoother, decant it 1 hour before serving, alternatively pour it in a voliminous glass an let it breathe befor serving the main dish. The wines temperature should be around 14-16°. Serve it preferably with strong, well-seasoned dishes.

The grapes are harvested mechanically and spontaneously fermented into wine in the mash fermentation process, which means that only the grapes' own yeasts are used without the addition of foreign yeasts. This is the first step towards a natural wine and the guarantee that this wine reflects the characteristics of the grapes and the soil and not the aromas of foreign yeasts. In the process, the coloring matter and tannins contained in the berry skins, which are important for the later appearance of the wine, but also for its taste and shelf life, are dissolved.
When fermentation is complete, the wine is decanted, meaning it runs out of the fermenter into another tank, leaving the solids and much of the dead yeast bacteria at the bottom of the tank. This process can be repeated several times until the wine is as clear as if it had been filtered.
After the biological acid reduction in which the aggressive malic acid contained in the wine is converted into the more compatible lactic acid, this organic wine, which can also be described as a natural wine, matures for two months in large oak barrels. It is neither sulphurised nor filtered during its production.
The prerequisite for this procedure is 100% healthy grapes that do not contain any rotting bacteria and have not been treated with fungicides. For this purpose, all equipment such as the wine press, pumps, containers and hoses must be in perfect hygienic condition. If this was the case, then the endogenous SO2 contained in the wine (a by-product of alcoholic fermentation), acidity and alcohol are sufficient to preserve this wine for a few years.
