This Mas Estela Dolc Solera organic wine is made by the Solera process, which takes 10 years. The result is a sweet and sour dessert wine with overwhelming aromas.
Profile
Colour: garnet red, almost mahogany-colored
Nose: beguiling scent of nuts and raisins, red berries, a hint of toast, coffee and chocolate.
Palate: fine and delicious! With rich aromas and flavors of dried fruit, plum, apricot, pear, sweet spices such as vanilla, cinnamon, nutmeg, anise, even dark chocolate that developed during the 10 years of maturation and refinement of this wine.

Organic wine processing Dolc Solera
The cultivation and care of the vines that grow on slate soils in steep hillside is done, according to biodynamic rules that are also applied in winemaking. The harvesting of fully ripe grapes is carried out by hand very late. To take the grapes to the wine estate, they are put in 12 kg-plastic containers in order to avoid any damage and oxidation. Here they are first separated from the panicles and then lightly squeezed, mash fermented for several weeks with their endogenous yeasts and pressed afterwards.
Only now the Solera process begins as it will otherwise be applicable only at the Sherry production. Until the bottling, the maturing by applying the Solera method takes 10 years to complete. The solera method starts by filling the first young wine into a 1,500-liter wooden barrel. After each of the next vintages 50 % of the content is removed and filled into a second barrel, from which after one year again 50 % go to a third barrel and so forth. The missing wine of the first barrel is always replaced with the new vintage.
