The Domaine de l'Enclos comprises 33 hectares of vineyards in various locations in the Chablis appellation in Burgundy. Among them are some with the best geological conditions. Founded in 2015 by brothers Romain and Damien Bouchard, the Domaine de l'Eclos has been successively farmed organically and certified by ECO CERT. This investment was made possible by the sale of their father's renowned wine shop. The winery is located in the center of Chablis on land formerly occupied by the monks of the Pontigny Abbey.

The underground cellars beneath the large 19th-century building were expanded to 450 m2 in 2016 and now serve as a wine cellar.
The two brothers describe themselves as perfectionists, respectful, caring, and positive. With this approach, they and their team, consisting of 20 people year-round and 60 during the harvest season, strive to care for the vineyards and vines year-round and produce the finest organic wines from the grapes.
To protect the vines from disease, they use only natural remedies, copper, sulfur, and plant preparations. The winery is now fully certified organic. The grapes are harvested manually at perfect ripeness, sorted on a vibrating table, and pneumatically pressed. The juice flows into stainless steel tanks in the temperature-controlled cellar below.
Winemaking is carried out without additives and without sulfur, using endogenous yeasts found on the grapes. The wines age on their lees in vats and barrels for up to 18 months. The wines are neither fined nor cold-treated. Only a light filtration and a moderate addition of sulfur (SO2) take place before bottling.
In summary: living soils, healthy and ripe grapes, simple and natural practices, minimal intervention, monitoring and patience are the secret to producing good organic wines.
