Priorat DOQ, Silvestris, Gratavinum, organic wine, red, 2015
It is said that the topography is responsible for the character of a wine. In the Priorat with its steep vineyards and less fertile soils, it is also the vines that contribute to a good organic wine. The Silvestris Priorat DOQ, by Gratavinum is a good example of this.
Color: garnet red, with violet nuances
Nose: intense scent of ripe red and black berries, underlaid with cleaner, clearer note new oak barrels
Palate: with volume and depth. Harmonic and diverse fruit flavors. A pleasant acidity and subtle tannins make for freshness despite his full body an infinitely long aftertaste.
This organic wine can be described as "natural wine" because it neither came in touch with foreign substances.
Serving suggestion: It is recommended to decant the Silvestris and serve with 16° C.

Organic wine processing Silvestris
The vines grow on steep slopes which are partially terraced. The vineyard soil is of shale and weathered shale which is not very fertile, but the grapes harvested are of exceptional quality, which is also expressed in the wine.
After the manual harvest the grapes macerate for 7 days at cooler temperature before the natural fermentation of the grapes own yeast is activated. This takes 10 days at a controlled temperature of 25° C in stainless steel tanks.
The vinification is done in new 400 liter French oak barrels for a period of 8 months.
