Organic wine - processing, Château La Vivonne, Côtes de Provence, AOP, red

The Château La Vivonne is located a few kilometers from the Côte Azur on the climb to the limestone mountains and the Sainte Baume nature park.

The Bandol appellation vineyards are of exceptional quality, which enables the Mourvedre grapes grown to be of an extremely high quality.

Similarly good are the neighboring vineyards, which belong to the Côtes de Provence appellation. The soil there consists of sandy silt that is stored on marbled limestone.

The soil is cultivated without herbicides or fertilizers. The vines have never been treated with systemic means or with insecticides. Only the inevitable protection against fungal diseases such as mildew and oidium requires preventive treatment with the so-called Bordelaiser broth (small amount of copper sulfate and lime).

Depending on the needs of the vines, flowering and nitrogen-forming plants are sown and later incorporated into the soil for humus formation. During the growing season, the less well developed grapes are cut off to reduce the amount of harvest and thus improve the wine quality.

The grape harvest is carried out manually and at the same time the grapes are selected. So that they don't crush, they are transported to the winery in small boxes.
There the berries are separated from stems and panicles and fermented in the mash for 13 days. The wine then matures in stainless steel tanks for 5 months without oxygen to preserve the fruity aromas. The wine is not filtered.
