For the Cuvée Domaine les Patys Ventoux AOC Ama Dablam red, the harvest volume per hectare was only 3,000 liters and this red organic wine with an exotic name was correspondingly dense and concentrated. Thierry Delasalle impressed him as much as the summit of the mountain of the same name in Nepal.

45 year old vines deliver the grapes, which are harvested exclusively by hand. The must fermentation in thermoregulated stainless steel tanks takes 2-3 weeks, depending on the grape variety, after which the wine matures for another year in stainless steel tanks before it is bottled.
