- Nose: overwhelming scents of red fruits and berries reminiscent of a cherry jam, blackberries, exotic spices and dry wild herbs.
- Mouth: impressively lively, dense and concentrated, juicy, seductive with a precise raspberry note, flowery pastille aromas and a hint of spice cake. Persistently long and smooth in the mouth, with a focus on ripe, soft tannins and floral persistence.

The special feature are the large pebbles made of quartzite and clay that cover the soil of the vineyards here, as well as red sandstones and colluvium, chalk limestone from the Barremian. They store the warmth of the day, they are rich in minerals that can be absorbed by the deep-rooted old vines.
The manual harvest is based on the respective degree of ripeness of the grape varieties, which is different in each vineyard location. The grapes are sorted for the first time on the vine, which are then transported to the winery for further processing in boxes of 50 kg. Here the grapes are checked again on a sorting table and, if necessary, the less good grapes are sorted out. This is followed by the separation of the berries from the panicles, the light squeezing of the berries, whereby some of the grape juice already runs out. This mass is called the mash. It begins to ferment spontaneously with the grape's own yeast, which converts the sugar contained in the mash into alcohol and carbonic acid (escapes). During this process, which lasts 4 to 5 weeks, the temperature is regulated and the mash is pumped daily using the cap floating on it. This enables the extraction of the flavoring and coloring agents still contained in the berry pods, which pass into the wine. Maturation takes place for 18 months mainly in concrete containers and in a few barrels of 350 liter barrels.
