Nathalie Margan continues the Château La Canorgue in the spirit of her father, who sees the basis for good organic wine in flawless and healthy grapes. Organic wine -  profile

  • Color : bright dark red
  • Nose : captivating flavours of strawberry, blackcurrants, blueberries, hints of thyme and rosemary before revealing a pinch of violet and cinnamon
  • Palate : voluminous organic wine with generous flavours of red and dark berries, herbes de Provence, fine tannins and a long finish
  • Drinking recommendation: 2-3 years of ripening are good for this wine, after which it reaches its top form and keeps it up to 7 years after the harvest year. The temperature should be 16-18 ° C.

 

Organic wine - processing, Château La Canorgue, Luberon AOC, red

Manual grape harvest, 50% of the grapes are destemmed and lightly crushed. The second half is spontaneously fermented with the grapes' own yeasts together with the first half for 8 to 10 days. Pressing is then carried out using a pneumatic press. The wine is separated from the pomace and a little later biological acid fermentation, also known as lactic acid fermentation, begins. Here, the malic acid contained in the organic wine is converted into lactic acid (more compatible). During our long collaboration, the quality level was always very high, with minor deviations due to different weather conditions. This is an indication of natural winemaking, where nothing is removed from the wine and nothing other than a small dose of sulfur is added. This red organic wine then matures for 5 months, partly in large wooden barrels with a capacity of 1,000 l, in amphoras, in stainless steel tanks and concrete tanks, in which this red organic wine is refined and almost reaches its drinking maturity. The tannins fade into the background, the scents and aromas develop and are released. To ensure that as many flavors as possible are retained in the wine, it is only slightly filtered before being bottled.
