Fermentation time: 14 days with 3 times daily pumping (remontage), during the 2nd half of the fermentation process the skins is pushed back into the mash twice a day (delestages). After the end of fermentation, the mash is gently pressed. The young organic wine first is stored in stainless steel tanks (malolactic fermentation) and then until bottling in concrete tanks.
