Ondin de Bayle, Château de Bayle, vin de France, red, in reconversion, 2017

Serge Chauveau, the winemaker of Château de Bayle, not only works according to Demeter's biodynamic specifications, but he is also a convinced geo-biologist. This means that he
not only takes into account the influence of the sun, moon and stars in its work, but also the ground existing radiation. If you find this approach too esoteric, let yourself be inspired by this wonderful Ondin de Bayle organic wine red.

Organic wine processing Ondin de Bayle

As an allusion to the Bordeaux style, this wine is the result of Cabernet Franc, mainly Cabernet Sauvignon, but also Petit Verdot and Merlot grapes and a common winemaking (vinification). Then this wine matured in amphorae, sublimating all the characteristics of the grapes and allowing the wine to develop oriental notes. reminiscent of sandalwood, paprika and black currants.
In keeping with the attributes that were felt on the nose, this quasi-natural wine (only 56 mg / l sulfur) in the mouth is supple, balanced and very sustainable in the finale.
