Organic wine processing
For this wine the harvest quantity is only 50 hl / hectare.
The grapes thrive in a vineyard San Sebastiano on steep slopes on the outskirts of Coconato and are picked by hand.
After the berries are freed from the panicles, they are slightly squeezed and fermented with a 10 to 12 day fermentation of the mash. For this purpose only the yeast yeasts and no pure yeast are used. After the end of the alcoholic fermentation only the first wine, obtained by gentle pressing, is processed further. The alcoholic fermentation is followed by the malolactic fermentation, followed by a 12 month maturation in barriques previously used for another wine.
