Everything seems easy. The grapes thrive in the vineyard located in the southeast to southwest ,slope directly on the vineyard. They are harvested by hand and thereby selected and immediately brought to winemaking in the winery. The berries are freed from the panicles, lightly squeezed and fermented in the mash in concrete tanks and also the muturation took place in concrete tanks. Bottled war thsi wine about one year after the harvesting a little over a year after the grape harvest.

The bottle labels of the Chianti Colli Senesi represent Charlemagne, who asked his knight Tolfo de Gricci in 785 to build a defense tower in Siena. According to research in the Siena State Archives, the foundation stone for today's Torre alle Tolfe property was laid.
