Organic wine profile

• Color: ruby red with a tendency towards garnet red
• Nose: Color: intense and extensive aromatic, with fruity notes, Mediterranean undergrowth, blackberries and blueberries, complemented with a hint of chocolate
• Mouth: full body with present tannins, adequate acidity, harmonious and elegant finish that lasts for a long time
• Drinking recommendation: goes well with dark meat, game and game fowl, mature cheese. Drinking temperature 16 to 18 ° C

Organic wine processing Brunello di Montalcino

The grapes for this Brunello di Montalcino come from a vineyard with 5,500 vines per hectare. They are now 25 to 30 years old, which is said to be a good age for both productivity and quality. The grape are picked by hand and simultiously selected.

The maceration and alcoholic fermentation takes place at a controlled temperature with the grapes own yeast and last about 20 days.

The wine then spends 42 months in large French oak barrels and a further 6 months in bottles before it is allowed to leave the winery for the first time.
