Organic wine - profile

  • Colour:  Ruby red color with violet reflections
  • Nose: Good olfactory intensity with typical notes of flowers and ripe red berries.
  • Mouth: Pleasantly hearty, fresh and fruity in the mouth with good structure and persistence. Excellent in combination with salads, hearty sea or sea fish dishes, served chilled as an aperitif.
  • Serving tip: this wine can be stored for 3-4 years, but it tastes best when enjoyed young .

 

Organic wine - preparation, Azienda Agricola Valentina, IPERICO, Valpolicella DOC, organic wine, red

The vines/grapes grow in vineyards in the Denomminzion Valpolicelle north of Verona, which have been cultivated and treated organically since 2014. Depending on the plot, there are between 3,000 and 5,000 vines planted per hectare. The average planting density is .5,000 vines/hectare, planted in Guyot, double and single pergola styles. This achieves a harvest of 7,000 kg/hectare. The grapes are harvested by hand from mid-September to the end of October.  

The actual winemaking begins with the spontaneous maceration in stainless steel tanks at a temperature of 18-20° C. To extract all the coloring and flavoring substances contained in the skins of the berries The mash is pumped around twice a day so that the shells floating on the liquid are wetted. This process takes 15 days. The wine is then separated from the pomace and matured for a few months..
