The 2020 harvest began with the Sauvignon Blanc grapes at the end of August. The harvest result was very low compared like in the previous year. The vines, which were still very young at the age of eight, had to suffer from prolonged drought because their roots are not yet buried as deep as the roots of the older Verdejo vines. Apart from the small amount of harvest, the quality of the grapes was excellent. After maceration at low temperature, the fermentation took place spontaneously with the grape's own yeasts, which ultimately preserve the terroir-specific character of this organic wine. After fermentation, the wine matured on its "fine yeast" for four months. This process creates valuable enzymes that positively influence the taste, stability and shelf life of the wine.
