The Parés Baltà, Penedès DO, Indigena, is an elegant white wine from biodynamic cultivation, despite its wealth of fine aromas, which is produced in a completely natural way without complex cellar technology.

• Mouth: soft, smooth on the palate with many fruity components, creamy and perfectly balanced, and with a long finish.

As its name INDIGENA suggests, this biodynamic white wine is made from the Garnacha Blanca grape variety, native to the Penedes for generations and having had plenty of time to adapt to the local climate.

Since it was grown in the highest vineyard at 600 m above seal level of the Parés Baltà winery, the large temperature differences between day and night ensure particularly high-quality, fruity, aromatic, harmonious wines.

To ensure that these advantages are preserved in the wine, the oenologists take action Maria Elena and Marta only minimally participate in the winemaking process.

The grapes are harvested manually, separated from the bunches, lightly crushed and macerated for 4 hours. The subsequent spontaneous fermentation at only 16°C lasts 20 days, after which the wine is separated from the berry skins,
whereby the fine yeast remains in the wine where it is regularly mixed with the wine for 3 months (battonage) and then matured in one-year-old barriques, giving it the final touch.
Only a very small amount of SO2 was added to it before bottling and nothing else.
