The grapes from vines over 40 years old in the highest vineyard are harvested by hand in the first days of September and pressed as a whole bunch. Only the first, weakly colored juice is fermented at a cool temperature for this rosé wine. deliver grapes of excellent quality and expressiveness. They are harvested by hand and fermented in stainless steel tanks at 14°C for 30 days.
