Organic wine - processing, Weingut Sander, Dornfelder QbA, red

The Sander wine estate in Mettenheim was one of the first producing organic wines in Germany, now Stefan Sander is managing it like his grandfather did long ago. The vineyards are situated next the the river Rhine on flat grounds with sandy soil, but also in hilly areas with loess soils.

The wine processing starts with a 14 days lasting fermentation, during which the must is agitated regularly so that the berry pod that floats on the must is moist and can dissolve the ingredients. After the alcoholic fermentation follows the fermentation of the lactic acid and the maturation of the wine. Bottling is done in March / April of the following year.
