Pinot Gris is a type of grape that looks like a red wine grape during the growing season until almost ripe and only takes on a gray color shortly before harvest. This is also the case with the Abril Grauer Burgunder wine. Since grape berries are pressed immediately and their juice is fermented without further contact with the reddish skins, the result is a white organic wine.
