Organic wine - production, Mohr winery, Rheingau QbA Pinot Noir rosé

You know that the juice of the Pinot Noir grapes is colorless rather than light. That's why the grape berries are first separated from the panicles and lightly squeezed so that their juice can flow out. Both berry skins and grape juice make up the mash; it is only when they are together for a few hours at a cool temperature that the dyes are released from the berry skins and turn the must pink. It is up to the winemaker's discretion as to when the juice/must is drained from the berry skins and how much color the wine should contain. Only then does alcoholic fermentation take place, which transforms the must into wine.
