Can Descregut is a member of the Corpinnat association. Corpinnat is a European Union trademark. It was born out of a desire to raise awareness of the great sparkling wines (cavas) produced in the heart of the Penedes from 100% organic and hand-picked grapes. They are subject to high, uniform quality requirements: the grapes must come from the vineyards of the wineries concerned and all the work steps, from the production of the base wines to fermentation in bottles, disgorging and labelling, must take place on the winery. Thus, the Can Descregut, Memòria Reserva Corpinnat brut nature is clearly different from the mass-produced Cavas.

Organic wine - Preparation, Can Descregut, Reserva Corpinnat brut nature, organic cava, white

The Xarel-Lo grapes come from vines planted in the Pupurri vineyard in 1967. The Macabeu grapes come from the Socarrada vineyard, which was planted in 1976. They are harvested by hand to avoid oxidation before pressing. The base wine is spontaneously fermented at the Can Descregut winery with the grapes' own yeasts, then it matures for 8 months on the single yeast. Before the second fermentation in bottles, this base wine is only lightly filtered, a little sugar and yeast are added and the bottles are sealed with a crown cap. The bottles were filled in April 2019. The bottles are then placed upside down in shaking tables and regularly shaken by hand or turned a little so that the yeast that settles on the bottom and edge of the bottle slips into the neck of the bottle, where it forms a relatively solid plug that is removed from the bottle during de-bottle filling. The amount now missing in the bottle is not replaced with a "liqueur" made from sparkling wine and a sugar solution as usual, but only with the same sparkling wine from another bottle. This process of shaking and maturing until degorging took 60 months..

No sulphur is added to this Cava Corpinnat, so it can be described as natural sparkling wine.
