Bioweingut Hofer Zweigelt, Klassik, organic wine, red, 2016

Zweigelt is the dominant red wine grape in Austria from which very good wines can be made if you reduce their productivity a little, as is the case with the Bioweingut Hofer Zweigelt "Klassik" organic winery, which was given time to mature in large wooden barrels.

The vineyards of the Hofer organic winery are located around the village of Auersthal, about 25 km north of Vienna. Here in the southern Weinviertel the landscape is slightly hilly and most of the viticulture is practiced here, with organic viticulture becoming more and more popular. The Hofer organic winery has been growing organic viticulture for many years and has been converting to biodynamic viticulture according to Demeter guidelines since 2019. This is not only about the production of tasty, pure organic wines, but also consciously about protecting the environment. There are numerous nesting boxes for birds in the vineyards, and flowering nitrogen-producing plants grow between the vines. The work in the vineyards is done jointly by all family members.

The actual winemaking is the responsibility of the winemaker Hermann Hofer, who finds the conditions in a well-equipped cellar to produce good, clean organic wines. For the Zweigel Klassik it began with the manual grape harvest on September 21, 2019, followed by the must fermentation in a 2,000 liter open vat. It lasted 14 days. During this time, the solids floating on the must were pressed back into the must 4 times a day so that the flavors and colors contained in it could be dissolved and get into the wine.

The malolactic fermentation and maturation of this red organic wine lasted until the bottle was filled on August 1, 2018.
