Biodynamic wine preparation Domaine la Marseillaise, Côtes de Provence, rosé

The loamy vineyard soil and the vines growing on it are processed and maintained with the greatest care according to the principles of biodynamic agriculture according to Demeter. The vines are 18 years old (Syrah and Grenache). They are harvested by hand and brought to the winery in 20 kg containers, where they are freed of stems and panicles, lightly squeezed in a grape mill and immediately pressed. The fermentation starts spontaneously with the grapes' own yeast at a temperature of 18-20 ° C and lasts about 4 weeks.
