Organic wine profile

This Domaine Pommier Chablis Tradition is made the way it has always been done. Chablis is higher in the hierarchy than Petit Chablis and is slightly fuller, with richer scents and aromas of white flowers and more intense and long-lasting flavor.
Enjoy it at a temperature of 10 to 12° C. Serve it with fish, poultry, white meat, vegetarian dishes and young cow's milk cheese.

Organic wine processing Domaine Pommier, Chablis Tradition

It is a 4.7 hectare vineyard located in the Côteaux du Kimméridgien site in the commune of Chablis and Côteaux du Portlandien in the commune of Ligny-le-Châtel, planted with 25-year-old vines. The soils consist of clayey limestone.

The actual winemaking begins with the careful sorting of the grapes, followed by the destemming and pressing of the berries. The pre-clarification of the must takes place at cold temperature and lasts 24 hours. The alcoholic fermentation starts spontaneously with the grapes' own yeasts in thermoregulated stainless steel tanks. A few months later, lactic acid fermentation begins, transforming the malic acid present in the wine into lactic acid. This process is also called biological acid degradation. Finally, this white organic wine matures for 12 months on its fine lees, which intensifies its aromas and taste and improves the shelf life of this organic wine.
