Winemaking, like the cultivation of the vines and the care of the vineyard, takes place in compliance with the principles of biodynamics. The grapes are harvested manually, the maceration takes place at a low temperature and lasts only a few hours. The pressing is gentle so that no bitter substances from the skins of the berries get into the wine. Fermentation with the grapes' own yeasts takes approx. 10 days.
