The grapes are very carefully harvested by hand, completely descaled and macerated for 2 - 3 hours. The subsequent very gentle pressing takes 2 hours. The juice is cooled to 12 ° C and left to rest for 24 hours. This is followed by the temperature-controlled fermentation with added yeasts, whereby the sugar contained in the grapes is completely broken down. Then this white organic wine ripens in underground tanks. Before filling in bottles, a filtration with sterile celluose filters is performed.
