This Torre alle Tolfe Ciliegiolo is a demanding, strong drinkable but dry and low-acid wine that is very easy to drink and pleasantly enjoyable. Because of this characteristic, you may enjoy it over the course of an entire evening before or after dinner.

Organic wine profile

• Colour: dark purple red
• Nose: soft, fruity scents of black cherries are clearly perceptible, with a hint of strawberry and mint.
• Mouth: seductively fruity on the palate, as well as velvety and supple, fine fruit sweetness, followed by round, ripe tannins. Very balanced with a pleasant, lasting taste.
• Serving recommendation: can accompany young cheese, a chocolate or nut cake, but is also a lot of fun solo.

The Ciliegiolo - the small cherry is a grape variety with round berries of a dark red-blue color, which despite its very thick berry skin is susceptible to fungal diseases and therefore needs a dry climate. Perhaps that is the reason why their distribution is limited despite good wine quality.

At the Torre alle Tolfe winery it grows on sandy soil on a slope with a south-westerly and east-facing orientation and a planting density of 5,000 vines / hectare.

The grapes are harvested manually and selected at the same time. The must fermentation begins spontaneously with the yeasts naturally present on the berries in a concrete tank and lasts 30 days. Then the wine matures in large oak barrels.
