By the "Ripasso-procedures" (see winemaking) which lasts 18 months, the Corte Sant Alda Campo Magri  wine gets its distinctive flavours of ripe cherries, which combine the spicy, mineral and fruity components to a rich, fine and harmonious biodynamic wine.

Biodynamic wine processing, Corte Sant Alda, Valpolicella Superiore Ripasso DOC, "Campo Magri"

Campa Magri (lean field) is called the vineyard where the grapes Corvina Grossa, Corvina Veronese, Rondinella, Molinara thrive for this Valpolicella Superiore Ripasso. It is planted with an incredible amount of 9,200 vines per hectar. This dense planting forces the vines to root deeply into the soils where water and minerals is provided for the vines growth. By this way of viticulture, artificial irrigation is not neccessary.

The grapes are picked by hand and the fermentation is done without artificial yeasts in oak barrels. In February, the Valpolicella is decanted into barrels of cherry wood, to which the almost completely fermented berries of the of the Amarone are added. This process is called Ripasso, which lasts 18 months and gives the Valpolicella Ripasso its distinctive flavour of ripe cherries, which combine the spicy, mineral and fruity components to a fine and harmonious wine.

No sulfur is added to this biodynamic wine, which is why it is generally accepted as a natural wine.
