Organic wine preparation La Baratta, Chardonnay, Veneto DOC

The grapes are harvested mechanically or manually, depending on the location of the vineyards and the quality of the grapes. Maceration and fermentation lasts 8 to 10 days, depending on when the right color nd flavor of the wine have been achieved. The ripening and refinement takes place in stainless steel tanks so that the fruity aromas of the grapes are retained in their freshness.
The second fermentation, during which the resulting carbonic acid remains in the wine, takes place in a pressure tank.
