Organic wine - Profile

  • Mouth: in the mouth there are aromas of citrus fruits that suggest a lot of freshness. Overall balanced, very clean with a long finish.
  • Drinking recommendation: serve this white wine at a temperature of 9 ° C., if you like it with starters, light dishes, vegetables, fish.

 

Organic wine - making, Vins el Cep, Blanc de Terrer, Origin Terrers

The winery comprises 100 hectares of vineyards, 30 hectares of which are cultivated biodynamically according to the criteria of the Demeter Association and 70 hectares organically. With a few exceptions, the grapes from the individual vineyards are used for cuvées, i.e. for wines from different varieties. These can come from a biodynamically or biologically assessed vineyard. For this reason there is only one wine and one cava that can bear the Demeter logo. In the course of the next few years, all vineyards will subsequently be converted to biodynamic viticulture.

This wine is made from a single grape variety, the Xarello grape, which grows in Can Miquel de les Planes in Gelida, on the slopes of Espiells. This 2 hectare vineyard is cultivated according to the principles of organic farming, which makes it possible to obtain grapes of the best quality to produce this excellent wine.

The vines were planted in 1974 at a distance of 1.2 m from vine to vine and with a line spacing of 2.8 m on a slight slope in a south-east orientation. You are now at the optimal age in which quality and quantity are in balance. The soils in this vineyard are of moderate depth, with clay structures, porous with great microbiological activity.

Usually the climate is ideal, moderate rainfall allows the grapes to develop well in the final vegetation cycle and to expect high quality harvests.

The grape harvest in the vineyards of Vins el Cep begins in mid-August with the Pinot Noir grape variety and ends at the end of September with the Cabernet Sauvignon variety.

The grapes are harvested by hand and brought to the cellar for further processing in transport boxes as quickly as possible. There they are gravity fed into the wine press, where 45 - 50% of the juice comes out of the berries without pressure and the rest is gently pressed. This is the most subtle way to extract grape juice. This is followed by a very short maceration in the skins at a low temperature. Then the berry skins and seeds are separated from the grape juice, which begins to ferment in small stainless steel tanks.
