Vines aged more than 40 years produce grapes of excellent quality and expressiveness. They are harvested by hand and fermented in stainless steel tanks for 30 days at 14°C. The very low temperature for fermentation and the long fermentation time are an indication that great importance is attached to preserving all the aromas of the grapes and the freshness of this red organic wine. The subsequent maturation and refinement on the fine lees serves to increase its expressiveness and its good storability. The altitude of the vineyards keeps the temperatures lower than they are in lower lying vineyards. In addition, there are larger temperature differences between day and night, which favor the development of fruitier and lighter organic wines.
