The Chardonnay grape variety has its roots in France; as you can taste at the Sander Chardonnay Reserve winery, it has also acclimatized very well in the Mettenheim vineyards. It would be a shame to only produce a simple, ordinary wine from this grape variety and that's why Stefan Sander (the winemaker) pulled out all the stops to create a special organic wine.

Organic wine - profile

  • Colour: Straw light with golden reflections
  • Nose: The nose shows powerful wood flavor mixed with saffron, Cardamom and ginger. The brilliant start is followed by fruity notes of ripe after some oxygen contact Apricot, pickled pineapple, orange and orange peel. Vanilla, anise and clearly ginger are also present.
  • Mouth: The palate is juicy and expansive with clear fruit and sweetness from the previous wooden aging. Some aeration will enhance its rich aromas
  • Drinking recommendation: now or in 10 years from vintage with a temperature of approx.10% C. Serve it preferably with well seasond dishes like a nutmeg pumpkin soup with macadamia crunch, game galantine with pickled spiced oranges, grilled octopus on corn and mint, rasted duck covered with a spicy crust with apricots and ginger.

 

Organic wine - processing, Weingut Sander,  Chardonnay Reserve, QbA, white

Part of the manually harvested and selected Chardonnay grapes are freed from the panicles and stems, and their juice is immediately pressed and fermented. The second part is macerated with the skins and fermented in the mash. The aging takes place partly in barriques, in large wooden barrels and in clay amphorae. These processes take many months so that this Chardonnay could be called "Slow Wine" based on Slow Food.
