The La Baratta Prosecco Spumante is a real winemaker's prosecco for which the best grapes from their own vineyard are selected and which has received all the attention of the winemaker.

Organic wine preparation La Baratta, Prosecco Spumante extra dry

The grapes are harvested mechanically or manually, depending on the location of the vineyards and the quality of the grapes. Immediately afterwards, the best grapes are selected, pressed and fermented at a low temperature. This alcoholic fermentation is followed by the second fermentation with the addition of yeast and sugar in a pressure tank, so that the resulting carbonic acid is bound in the wine and later gives it the delightful mousse. For this organic Prosecco Spumante, the second fermentation takes 4 to 5 weeks. This long procedure makes the perlage in the glass finer and longer lasting. As a result, the longer this process takes, the more persistent the perlage will be later in the glass. Unfortunately, our state drinks this Prosecco Spumante in the form of the sparkling wine tax of € 1.02 + € 0.21 VAT.
