Biodynamic wine - processing, Château Romanin, Les Baux de Provence, rosé

The different geological conditions present on the vineyards of Château Romanin were decisive during the planting of the vines. As a result, Grenache and Mourvèdre grapes were planted in 1991 on gravel soils (gravels and sand), followed by Syrah and Counoise on sandy-clay soils in 1992 and 1993 respectively. Production volume per hectare is low, which is a prerequisite in the production of quality wines. Harvesting is done by hand, and the grapes are then pressed gently. During a maceration at 10 ° C, the must clears and enzymes are released, which give the wine fruity notes. The liquid is then collected separately and fermented at a temperature between 18 and 20 ° C. This organic wine is then aged on lees in stainless steel vats for six months, during which it will undergo several batonnages.

Every work step, both in the vineyard and during winemaking in the cellar, up to the filling of the bottle, must take place at a certain position of the moon and the stars.

  • Nose: white flowers (honeysuckle), then notes of quince, tangerine and strawberries.
  • Mouth:full and mineral, with nice aromatic roundness with fine accent of fresh bread crust and a pleasant, long finish.

Biodynamic wine - processing, Château Romanin, Les Baux de Provence, white

A prerequisite for producing high quality wines is a lower yield, which is intended in the Château Romanin. The grape picking was manually performed. Afterwards, the grapes were sorted again on the conveyor  belt, the whole grapes were then pressed slowly, followed by pre-clarification at 10° C and the alcoholic fermentation at 18 to 20° C in stainless steel tanks. The malolactic fermentation, which then normally started, was suppressed to preserve the freshness of the wine.The maturation of this wonderful white organic wine on the fine yeast took 5 months. During this time a regular batonnage (stirring) was applied, which gives the wine deeper and more complex flavors, as well as a better shelf life.

It is said that biodynamically produced wines have a certain something that other wines lack. It's hard to describe, perhaps it's the complexity and harmony of the Domaine la Marseillaise IGP de Var Merveillement wine that exemplifies it? Judge for yourself, we are curious about your opinion.

Speaking of IGP or country wine: Why is this wine "only" a country wine? Not because it is less good than an AOC (quality wine), but because the Viognier grape variety was also used, which is not permitted for an AOC wine from the Côtes de Provence appellation and is therefore not typical. However, this does not detract from the quality of this biodynamic wine!

Biodynamic wine - Elaboration, Domaine la Marseillaise, IGP du Var, Merveillement, blanc

The vineyard soil, which contains clay and sand, and the vines growing on it are cultivated and cared for with the greatest care according to the principles of biodynamic agriculture according to Demeter. The vines are 20 years old (Ugni Blanc) and 5 years old (Vermentino and Viognier). The grape harvest, an average of 50 hectoliters per hectare, is carried out by hand and brought to the winery in 20 kg containers, where they are immediately destemmed, lightly crushed and macerated for a short time in contact with the skins of the grapes. The fermentation starts spontaneously with the grapes own yeasts. It lasts 4 weeks at a fermentation temperature of 18 to 20°C. This biodynamic white wine then matures for 3 months in stainless steel tanks on its fine lees, which is stirred regularly. It is not clarified with agents containing protein, but only lightly filtered before bottling.

  • Color: intense ruby red color with a beautiful shine.
  • Nose: The nose reveals aromas of black berries: black currant, blueberry, blackberry and floral notes of hawthorn and orange blossom. The woody note is delicate and particularly well fused with the richness of the aromas.
  • Mouth: as soon as the first drops flow over the lips into the mouth, they already provide a sweet pleasure experience. The tannins are silky, the aromas of black fruits are expressed. The finish is elegant and shows a great balance between minerality and spices
  • My drinking recommendation: This cuvée could accompany a roasted nut of an Iberian pork leg with a garlic cream sauce with new potatoes roasted with rosemary.

Although the grapes are picked by hand in perfect ripeness, a further selection of the grapes is done on a reading table. If you have never heard of the term ORANGE WINE or do not know what it means, then I would first like to reassure you that it is not a wine made from oranges.

This is also the case with the Domaine Les Béates LOU O'RANGE, Côteaux d'Aix AOP, organic wine orange

Rather, it is a winemaking technique in which white grapes are treated like red grapes for red winemaking. The skins of the berries are injured using a so-called grape mill, which means that part of the juice runs out, which then macerates and ferments for a longer or shorter time with the skins, i.e. in the mash. Depending on the grape variety and the duration of this process, the originally white juice takes on the color of the grape skins, which are rarely clear and light in color. Consequently, the appearance and taste of this type of wine is unusual. This is what wines might have looked like in earlier centuries.

The Château la Vivonne, the Domaine les Beátes, the Domaine de la Marseillaise and the Château Saint Jean lez Durance produce wonderful organic wines and biodynamic wines with a flair of luxury, which are included in the Provence organic wine tasting package.

 

 

The package contains the following organic wines:

  • 2 bottles Château Saint Jean lez Duranced, Pimayon, Pierrevert AOP, Biowein rosé.
    A fabulously good and fine organic wine from grapes grown in grow in the winery's best vineyard. It is a delightful, fruity-fresh rosé with rich scents, aromas and harmonious taste.
  • 2 bottles Domaine La Marseillaise, Abondance, IGP, de Var, red,
    glossy cherry red, smells of red berries and fruits with spicy notes, very fruity and fresh on the palate, with an intense taste, very good structure, slightly noticeable tannin, which is as well integrated into the wine as its alcohol.
  • 2 bottles La Marseillaise, Justinien, IGP de Var, red, 2017
    dark red color, a bouquet full of fruity aromas of red and black berries, and fruit fragrant spicy notes. Very fruity on the palate, with a round, intense taste, very good structure, slightly noticeable tannins that are integrated into the wine as well as its alcohol.
  • 2 bottles Château La Vivonne, Côtes de Provence, AOP, red, organic wine, ruby red, aromas of red and black berries with spicy notes of Provençal herbs, on the palate very rich wine with great flavor, fruity, with a fresh, long-lasting aftertaste. Serve it with spicy dishes, Provencal dishes, grilled meat or fish.
  • 2 bottles Château Saint Jean lez Durance, Alpes de Haute Provence IGP, organic wine, rouge
    Garnet red with intense cherry reflections. Fruity aromas of sour cherries, raspberries, blackberries and a hint of liquorice. In the mouth fresh, robust and soft on the palate. Complex aromas of fruit jam, red berries, herbs de Provence. Long-lasting taste with fine tannins.
  • 2 bottles Domaine les Béates, Côteaux d'Aix en Provence AOC, vin bio, blanc,
    light golden with white reflections, rich scent of white peach, acacia blossoms and freshly baked baguette, opulent in the mouth with soft fruit notes and subtle aroma of a freshly baked baguette, the mineral components give it a good structure and promise a long life.
