Depending on the plot, the grapes are harvested manually or mechanically and completely destemmed. The actual winemaking begins with a 3 to 4 day maceration of the lightly crushed grapes and a 3 week maceration and fermentation. The aging of this biodynamic wine in concrete tanks takes 9 months.

The grapes are harvested mechanically with subsequent sorting by hand and an automatic sorting system of the type Mistral, which works with the help of air.
