After the crushing of the grapes and a short time of maceration, the grape juice runs automatically without pressure from the press. This process is called "Saigné", meaning bleeding. This prevents tannins and bitter substances from getting into this delicious organic rosé wine. The fermentation takes place at low temperature to preserve the fresh and fruity aromas.

The grapes for this fine white wine are manually picked and slowly pressed. 90 % of the juice ist fermented in stainless steel vats and 10 % in new barriques at low temeprture of 17-18 C. The maturing of this white organic wine is made only in stainless steel tanks, so that the pure fruit flavors are preserved. During this time, the wine was clarified only by repeated refilling (the solids deposited at the bottom of the vat remain behind). This way of working requires perfect and healthy grapes.

The Château Saint Jean lez Durance Pimayon red is a generous organic wine with unbelievable fullness, with complex, rich aromas in perfect harmony in a long lasting finish. 

 

Organic wine - profile

  • Eye: deep violet colour in adolescent age, then increasingly changing to purplish red.
  • Nose: intense scent of ripe fruit, dried fruit, cocoa, black pepper, roasted coffee and subtle wooden scents.
  • Mouth: generous, rich, concentrated. With aromas of licorice, dark chocolate. Generates a balsamic mouthfeel, velvety, fleshy, dense, silky-soft tannins, full-bodied, full-bodied, intense and long on a finish.
  • Recommended Serving:at 16-17° C. It goes well with dark, braised meat with gravy, mature cheeses, richly spiced dishes and rich stews.

Organic wine - processing, Château St. Jean lez Durance, Pierrevert AOP, Pimayon, red

The terroir of Pimayon is located on the highest of the 7 hills, where Jean Giono (a French writer born near the Château Saint Jean les Durance in Manosque) was walking. The vines grow there on barren, but always sunny ground with exceptional thermal amplitudes. The wines are fine and aromatic.

Because of the high temperatures that still occur in Provence in September, the grape harvest is done at night with harvesters or manual during the late evening until complete darkness at cooler temperatures.  Then follows a relatively elaborate winemaking to achieve the best possible wine.  First, the grapes are very gently squeezed then subjected to a cold maceration in thermo-regulated stainless steel tanks, forming important stabilizing enzymes. Subsequently, the mash is slowly fermented without stems and panicles in stainless steel tanks at low temperature. The pomace floating on the liquid is often pushed into the mash. After fermentation, the wine matures both in large barrels (foudres) and in barriques.

If the lowest-priced wine of a vineyard already shows convincing characteristics, one can generally rely on the fact that all wines of this producer possess a high quality level. So it is with the organic wine Château Saint‐Jean Lez Durance, IGP Alpes de Haute Provence. Here the wines are produced in Provence under very favorable climatic conditions and therefore they are one of our favorites.

 

Organic wine - Profile

  • Color: Garnet red with strong cherry red reflections
  • Nose: Cherries, raspberries, blackberries and licorice
  • Mouth: it is fresh, firm and soft on the palate with complex aromas of fruit jam, red berries, and herbs of Provence. It’s taste is long lasting with fine and subtle tannins.
  • Recommendations: Serve at 15-17° C until 2021. Serve it with all nutritious and spicy foods.

The grapes from the vineyards located near the winery are harvested by machine in the dark of the beginning of the night, then freed from stalks and panicles, subjected to cold maceration, and fermented at a controlled temperature. The skins of berries floating on the must are regularly pressed into the must, and the must is alternately pumped over it. As a result, all colors, flavors and flavoring ingredients can be dissolved and transferred to the organic wine. After maturing for several months in concrete tanks, the organic wine refines in concret tanks and is then bottled, where it lingers for several months before being sold for the first time. He reaches his initial drinking maturity about 18 months after the harvest time.

As you can see in one of the photos, the Château Saint Jean-Lez-Durance is surrounded by large, old plane trees. Since the grapes for this  wine come from the adjacent vineyards, it was named LES PLATANES. Please do not let the label labeled "Merlot" irritate you. It is mostly made from Merlot, but also from Cabernet Sauvignon, Syrah and Grenache, which give it a more complex character.

  • Mouth: It is a successful cuvee, which is quite exceptional in this price range. A biodynamically produced red wine with rich aromas and a complex variety of flavors with fruitfulness and harmonic nature.

Biodynamic wine - processing, Château Romanin, La Chapelle de Romanin

Especially the care of the vines in the vineyard, we owe the emergence of this paradisiacal wine. It begins with the cutting of the vines in the winter, in spring the shoots must be tied to the wires, during the vegetation phase the shoots grow extremely fast and must be thinned out several times. A few weeks before the harvest leaves are removed above the grapes so that they can still capture every ray of sunshine. The highlight of a wine year is the vintage. It starts when the most important and desired parameters "sugar, acidity and PH value" are reached. Of course, at the Château Romanin it is done by hand. By the way, during the grape picking by hand every single grape can be controlled and, if necessary, sorted out.

Experienced winemakers know that it is worthwhile to treat the vines in the vineyards well. Because the better the grapes, the higher the quality of an organic wine. In addition, during the wine processing it can be dispensed on many technical steps and other auxiliaries and additives. With this approach you get very close to the term "natural wine".  A term, which  is not exactly defined.

In any case, only a small amount of sulfur is added to this biodynamic wine, which prevents the oxidation of important flavor-enhancing ingredients in the wine and the enjoyment value is retained longer. Based on many years of experience in the tasting of natural wines or natural wines, we consider these terms more as a natural wines marketing tool than a promise of enjoyment. Moreover, it would be a shame if winegrowers worked hard for a whole year in the vineyard and end up presenting flawed and often inedible wines. That's why it's so easy here at the Château Romanin to make the best possible organic/biodynamic wines: The stems and panicles are separated from the berries, then slightly squeezed and fermented spontaneously in stainless steel tanks without the addition of foreign yeasts. Thereafter, the wine is transferred to another stainless steel tank. In the process, the pomace (berry skins) is left behind. Now the malolactic fermentation begins, as is the case with all red wines, converting the aggressive malic acid into the milder lactic acid. After several months of maturation, this wine produced according to the Demeter guidelines is only filtered, very little sulfur is added shortly before bottling.

  • Palate: varied and generous fruity aromas, red and black berry flavours and spices. Supple, powerful, but not heavy, with silky, soft tannins. It has a long-lasting and firm aftertaste. It is a typical, very well-balanced Mediterranean organic wine.
  • Drinking recommendation: Serve at 17 to 18° C and enjoy it solo, or as a universal companion to many dishes.

The Domaine des Terres Blanches was founded in the 1970s by Noel Michelin as an organic winery on the Roman Via Aurelia. So it made sense to name his best red organic wine Domaine des Terres Blanches Cuvée Aurelia.

 

Organic wine - profile

  • Color: intense ruby red color with purple shimmer
  • Nose: Complex scents that evoke associations of fruity red berries, black currants, sour cherries, forest soil, sandalwood and cedarwood. Aeration of the wine intensifies these impressions and still adds notes of smoke.
  • Palate: The taste on the palate is lush and complex, and the aromas are reminiscent of the nose-scented red berry scents. The spicy notes of Garrique, of cinnamon, the ripe flavors of the barrique and a beautiful tannin structure underline the complexity of this organic wine whose aftertaste lasts long.
  • Drinking recommendation: this wine should be tempered at 16-18 ° C and aerated for one hour in a wide-bellied carafe. You can enjoy it now, or up to 10 years from harvest year.

The wine maker used the best grapes that were picked by hand in the vineyards close to the winery. This was followed by a 3-week mash fermentation with frequent immersion of the pomace so that as many as possible of the substances contained in the grape skins could be solved and transferred into the wine. The maturation of this organic wine in large barrels and barriques took several months. During this time, the wine was regularly transferred, leaving the solids at the bottom of the emptied barrel. This achieved a desired ventilation and avoided the otherwise necessary clarification and filtering of the wine. However, this way of working assumes that only flawless healthy grapes are used.

  • Color: deep, dense ruby ​​red.
  • Nose: you can experience a wealth of complex scents that occur together or in tandem depending on temperature and oxygen contact individually or in combination: chocolate, coffee, dark chocolate, white pepper, notes of leather and mint. Although the grapes are read by hand in perfect ripeness, a further selection of the grapes is done on a reading table. The mash fermentation (must with berries without stems and panicles) lasts for 20 to 30 days in large stainless steel tanks and wooden barrels at a temperature of 24 ° to 26 ° depending on the grape variety. After the end of the alcoholic fermentation followed by a few weeks delay of malolactic fermentation (lactic acid fermentation). After that, the young wine matures for 18 months in large wooden barrels where it refines and reaches its initial drinking maturity.

Every work step, both in the vineyard and during winemaking in the

Organic wine - processing, Domaine Les Béates, Coteaux d'Aix en Provence, Terra d'Or, red

 

The perfect ripe grapes are harvested by hand, brought to the cellar in small boxes, where the stalks and panicles are removed. Then they are macerated for 3 to 6 weeks depening of the variety and the location of the vineyard, followed be the fermentation with the prapes own yeast.

The aging and refining of the young wine takes place in oak barrels with a capacity of 600 l, 500 l and 225 liters for a period of 9 months. Then comes the assembly, that is to say the fusion of single-varietal wines into a cuvée, which then matures and refines for another 9 months in large wooden barrels.
