The Valpolicella Ca 'Fiui is great, the fruit of fifteen year old vineyards and aged in oak barrels that express a great aromatic finesse, with wild berries that intertwine the spicy notes typical of Corvina. In the mouth it is hearty, juicy and dynamic, a true wine of the territory made from fresh grapes.

Biodynamic wine processing, Corte Sant Alda, Valpolicella Ca Fiui

Ca Fiui has been known for centuries as a hilltop estate. Here, surrounded by vineyards and olive trees. The vineyards of Corte Sant Alda are exposed to the sun all day, providing mature grapes that give this Valpolicella character, strength and balance.

Corvina Grossa, Corvina Veronese, Rondinella and Molinara are the main grape varieties for this Valpolicalla, but there are also other local grapes added such as Croatina and Rossara. They all thrive in the vineyards of Tomasotti, Bianchini, Rossetti and Cavallero. Together, they cover 4.8 hectares, planted with 6,400 to 9,300 vines per hectare. Like all Corte Sant Alda vines, they are certified organic, but are farmed for several years using biodynamic methods.

The wine harvest is carried out traditionally by hand and begins in early October. The alcoholic fermentation in oak barrels begins spontaneously with the natural yeasts on the grapes. During this time, the skins of the berries are floating on the must are regularly stirred with the must. It follows the lactic acid fermentation and a 6 month maturation.

Biodynamic wine processing, Corte Sant Alda, Amarone della Valpolicella, red

I know of no other vineyard outside Burgundy, where so many vines are planted per hectare as in the 3.7 hectares of the vineyards of Roara, Vigneto Valetta and Vigneto Bosco. There are 9,400 vines / ha, which are cultivated and cultivated with particular care, as they represent the greatest value of the winery Corte Sant Alda and the high-quality Amarone, a organic wine of special quality. The grapes are harvested by hand from experienced harvest workers, using only the best grapes for the Amarone. You are carefully placed in the vineyard in air-permeable wooden boxes, and not a single berry may be injured. Then store these grapes in a well-ventilated drying room until February. During this time they lose 60 to 65% of their weight. Only then will you be fermented with the help of self-propagated yeasts of grapes from the same vineyard. Biodynamic wine - processing, Corte Sant Alday, Mithas, Valpolicella Superiore, red

The experience gained over many years with the different ways of working in the vineyard and cellar, with the aim of improving the quality of the Mithas of the year and not just producing a wine that is accepted by the market, which is correct or good, but the is better, even excellent, seems to have been achieved with this vintage. Of course, the results vary from year to year, not only in quality but also in quantity, and in some years there is no Amarone or Mithas. The grape varieties Corvina and Corvina Grossa for Mithas thrive in the “Macie” vineyard at an altitude of 350 m on a south-western hillside location with long hours of sunshine. The working method follows the biodynamic rules. The chalk soils are stony and barren. When fully ripe, the grapes growing on it provide impressive individuality, full of concentration and abundance of aromas. The grapes are always picked at the end of October. The fermentation takes place in oak barrels without pure yeast and takes about 20 days without temperature regulation. After 2 years of aging in 500 l barrels, this organic wine is bottled.

No sulfur is added to this biodynamic wine, which is why it is generally accepted as a natural wine.

Usually all Valentina Cubi wines have a name dedicated to the Valpolicella area and have a meaning, only the Azienda Agricola Valentina Cubi, SINCERO means natural. It has not been sulphurised, only has traces of indigenous sulfur (a by-product of alcoholic fermentation) and may be a good alternative for people sensitive to sulphur.

Organic wine - preparation, Azienda Agricola Valentina Cubi, SINCERO, Verona IGT, organic wine, red, unsulphured

The vines/grapes grow in vineyards in the municipality of Verona and have been cultivated and treated organically since 2010. Depending on the plot, between 3,000 and 5,000 vines are planted per hectare . The average planting density is between 3,000 and 5,000 vines/hectare. This achieves a harvest of 7,000 kg/hectare. The grapes are harvested by hand from mid-September to mid-October.  

The actual winemaking begins with spontaneous mash fermentation in conical stainless steel tanks. In order to extract all the coloring and flavoring substances contained in the skins of the berries, the mash is pumped around several times so that the skins floating on the liquid are wetted. This process takes 9 days. The wine is then separated from the pomace and aged for a few months "sur lie" (on the fine lees..

Sulphites were never added to this wine at any point during its production, neither during vinification nor during bottling.

The vines/grapes grow in vineyards in the Denomminzion Valpolicelle north of Verona, which have been cultivated and treated organically since 2014. Depending on the plot, there are between 3,000 and 5,000 vines planted per hectare. The average planting density is .5,000 vines/hectare, planted in Guyot, double and single pergola styles. This achieves a harvest of 5500 kg/hectare. The grapes are harvested by hand from mid-September to the end of October.  

The actual winemaking begins after destemming, the grapes are placed in steel tanks at a controlled temperature. At the end of the alcoholic fermentation, the young combines Wine for a 10-day maceration with the skins and residues of the Amarone. In this phase, a light fermentation takes place and the wine is enriched with extracts.The result is a more fragrant wine, softer and velvety on the palate. Aging: Twelve months in wooden barrelsand a few months in the bottle before going on the market.

The vines/grapes grow in the Rasso, Monte Tenda and Monte Crosetta vineyards. The terroir here is characterized by a high proportion of rock and is therefore suitable for the production of fine red wines such as Amarone Classico delle Valpolicella.

The harvest is carried out manually from the end of September to the beginning of October and at the same time the best grapes are selected. The grapes are carefully placed in wooden crates, which have large ventilation slots on all sides, and are stored in well-ventilated rooms until the beginning of January. The juice of the berries is concentrated and reduced by up to 50%. This is one of the reasons why an Amarone wine is more expensive

The subsequent 4 years of aging in wooden barrels and the additional 2 years of aging in bottles before the Amarone wine is allowed to leave is another reason for its relatively high Price.

The grapes were grown on the hills of Fumane and San Pietro in Cariano, in the vineyards of Rasso, Monte Tenda and Monte Crosetta. Here the terroir is characterised by a high rock content,  therefore suitable for the production of fine red wines.

Die Grapes were picked by hand from the middle of September until the end of october. The yield was almost 7.000 kg which resultet 5.000 liters of wine.
 
The vinification was made traditionally in a during 15 days together with the berries skins. Its refining and aging took place 12 month in wooden barrels. After bottling the wine is aged for some months in the estate’s cellar before being released to the market.

Refosco del Peduncolo is a regional grape variety in Friuli and eastern Veneto. This La Baratta Refosco dal Peduncolo Veneto, IGP impresses the eye with its intense ruby red color with violet nuances, but also with beautiful aromas and a fruity-spicy taste.
