The Château La Vivonne is located a few kilometers from the Côte Azur on the climb to the limestone mountains and the Sainte Baume nature park.

The Bandol appellation vineyards are of exceptional quality, which enables the Mourvedre grapes grown to be of an extremely high quality.

Similarly good are the neighboring vineyards, which belong to the Côtes de Provence appellation. The soil there consists of sandy silt that is stored on marbled limestone.

The soil is cultivated without herbicides or fertilizers. The vines have never been treated with systemic means or with insecticides. Only the inevitable protection against fungal diseases such as mildew and oidium requires preventive treatment with the so-called Bordelaiser broth (small amount of copper sulfate and lime).

Depending on the needs of the vines, flowering and nitrogen-forming plants are sown and later incorporated into the soil for humus formation. During the growing season, the less well developed grapes are cut off to reduce the amount of harvest and thus improve the wine quality.

The grape harvest is carried out manually and at the same time the grapes are selected. So that they don't crush, they are transported to the winery in small boxes.
There the berries are separated from stems and panicles and fermented in the mash for 13 days. The wine then matures in stainless steel tanks for 5 months without oxygen to preserve the fruity aromas. The wine is not filtered.

The loamy vineyard soil and the vines growing on it are processed and maintained with the greatest care according to the principles of biodynamic agriculture according to Demeter. The vines are 35 years old (Cinsault), 18 years (Merlot) and 5 years (Marselan). These three grape varieties ripen at the same time and are harvested together by hand and brought to the winery in 20 kg containers. Here they were freed from stems and panicles and fermented in the mash at 20 to 22 ° C with their natural yeasts. After the liquid has reached a density of 1035, the liquid is separated from the pomace and finally fermented. The red organic wine then matures on the lees for 3 months. Organic wine - processing, Château Saint Jean Lez Durance, Pimayon, Pierrevert AOP, rosé

The terroir of Pimayon is located on the highest of the 7 hills, where Jean Giono (a French writer born near the Château Saint Jean les Durance in Manosque) was walking. The vines grow there on barren, but always sunny ground with exceptional thermal amplitudes. The wines are fine and aromatic.

Because of the high temperatures that still occur in Provence in September, the grape harvest is done at night with harvesters or manual during the late evening until complete darkness at cooler temperatures.  Then follows a relatively elaborate winemaking to achieve the best possible wine.  First the grapes are squeezed very gently and gently, then subjected to a short cold maceration in thermoregulated stainless steel tanks, during which important stabilizing enzymes are formed and the colorants from the berry skins are transferred to the juice. The juice is then slowly fermented in stainless steel tanks at a low temperature.

In September, even the higher parts of Haut Provence can still be quite hot. Therefore, the grape harvest is done by hand and machine from the late evening till complete darkness at cooler temperatures. The grapes are transported as quickly as possible to the nearby winery. There, the berries of the Grenache and Cinsault-grapes are completely separated from stems and panicles, then pre-clarified in cold maceration. This is followed by alcoholic fermentation at controlled temperature. During a ripening period on the lees, this organic wine is stirred regularly, then lightly filtered and bottled.

By the way: Nearby is the Lac des Vannades, an artificial lake created in 1989 by the dredging of the gravel in the riverbed of the Durance. Today, the lake serves holiday makers and recreation seekers as a bathing lake. Another attraction is the nearby Gorges du Verdon.  For hikers, climbers or kayakers and nature lovers a worthwhile  destination. Organic wine - processing, Domaine les Béates, Les Béatines, Côteaux d'Aix AOP, rosé

The vines grow on sandy soil containing molasse which brings out the fruity components of these varietals especially well. The winemaking is done partially in accordance with the so-called Saigne method (the grapes are just crushed, and the juice drains off without pressing), and the other part is pressed directly. Fermentation is done at a low temperature in stainless steel tanks. Afterwards the wine has been filtered and bottled soon after.

The Domaine Les Béates, les Béatines Côteaux d'Aix en Provence organic wine red is of beautiful red colour and shades of purple, in the nose subtle nuances of spices and herbs which one can smell everywhere in the Provence. It’s very seductive on the palate with flavours of red berries and pleasantly smooth tannins. It goes well with typical spicy Provencal dishes such as ratatouille.

This year the wine harvest was particularly low for this organic red wine at 35 hl / hectare due to the dry weather. When fully ripe, the grapes were picked by hand, the stems removed and fermented for 15 to 21 days at a temperature of 25 to 35 ° C. The subsequent maturation of the wine in stainless steel tanks refined this red wine until it was bottled in autumn of the following year.
