It has not always been easy to make wine in recent years; drought, heat, frost and thunderstorms reduced the harvest volumes to a minimum. That is why the winemaker Olivier Durand has switched to producing wines from several grape varieties, i.e. cuvées, instead of varietal wines, such as this Domaine de la Triballe La Rainette rouge. There are plenty of rainettes (tree frogs) on Triballe, they are a sure sign of an ecologically healthy environment.

  • Color: intense, dark red
  • Nose: complex aromas of dark berries with spicy notes of liquorice and laurel fragrance reminiscent of dark forest berries and fruit jam, with spicy notes.   
  • Palate: rich and varied aromas and essences from the garrigue, violets and liquorice can also be felt in the minty finale. An excellent wine with exemplary characteristics of the dominant Syrah grape.   
  • Drinking suggestion: serving temperature 16 to 18 ° C. Traditionally, it would be served with grilled meat. If you are vegetarian or vegan, you should serve this wine with fresh herbs and well-seasoned dishes.

The soil in the vineyard is calcareous and littered with large round pebbles. The grape harvest for this excellent red organic wine is of course carried out by hand. During a six-week mild maceration and fermentation, the must is regularly pumped over the berry skins floating on the liquid and these are repeatedly mixed with the must. This process means that all of the ingredients that are important for the wine can be extracted from the berry skins. After 12 months of maturation in the tank, this red organic wine refines and, as it matures, approaches its drinking maturity.

Marselan is a relatively new variety bred around 1960 from a cross between Cabernet Sauvignon and Grenache. It was first cultivated  in the small village of Marseillan on the Mediterranean coast between Montpellier and Beziers. It has very small berries with little juice inside in relation to its skin. When the yield is purposely reduced like  at the Domaine Deneufbourg by appropriate pruning, exellent organic red wine can emerge. The Marselan variety inherents a large fungal resistance, which may be an important advantage in organic viticulture. The grapes are harvested by machine during the night at cool temperatures,  the the berries are separted from the stems and panicles, slightly squashed and 9 to 10 days fermented. The young wine then aged for seven months in stainless steel tanks.

The Deneufbourgs cultivate the Marselan and Syrah vines on a sun-drenched mountain ridge, over which the Tramontan sweeps - a periodic, violent wind that drags moisture out of the vineyard, thus preserving the grapes from fungal diseases. From these grapes, the deep-dark Domaine Deneufbourg Côtes Catalan IGP Olympe is created. .

 

Organic wine - profile:

  • Color: dark garnet
  • Nose: intense fruity bouquet of elderberry and blueberries, cherry, as well as black currants.
  • Mouth: fresh, fruity taste, powerful and round
  • Drinking recommendation: serve it with 16 ° C. Aeration in the glass or in a carafe over 2-3 hours makes this beautiful organic wine faster accessible, rounder and its  tannins step into the background and its aromas become more perceptible. It will be storable for about 6 to 7 years if stored in a cool place.

Organic wine - processing, Domaine Deneufbourg, Côtes Catalan IGP, Olympe, red

Corinne and Damien Deneufbourg started winegrowing in Roussillon in 2009, just as their Marselan plots yielded the first vintage. Today he is a pure variety or in this Cuvée Olympe Syrah has become their figurehead.

Both grape varieties grow on a sandy and loamy soil parcel that is exposed to the sun and the Tramontan wind.

The grapes, there are only 40 hl // hectares are harvested by machine at night at a cool temperature. In this case no disadvantage for the Quailtät of the wine, because the grapes are healthy thanks to the sun and the frequent wind and free rot and fungal infestation. They are processed separately to organic wine due to their different maturity. First, the grapes are separated from stems and panicles, squeezed and fermented for 14 days at controlled temperature and the must pumped regularly on the floating pomace (berry peel) so that it is always moist and the contents of it can dissolve and go into the wine.

After a maturing period of 12 months in a stainless steel tank, this wine is bottled in the cellar of Domaine Deneufbourg in November of the following year.
