With this organic wine Pago Finca Élez, Syrah we succeeded in transferring the characteristics of the noble grape variety from the Rhône to the limestone and mineral-rich soil to be transmitted at high altitudes. It is fascinating to look at their adaptation with their positive behavior and to admire the creation and development of an organic wine that differs from other origins with its freshness, the fruity aromas of fruits, the noble tannins and its verticality with promising aging.

Organic wine production ​Pago Finca Élez, Syrah

The Syrah grapes come from the La Nueva vineyard - Finca Élez at an altitude of 1,000 m.
The soil in this vineyard dates back to the Mesozoic era and is over 66 million years old. It consists of sandy clay with clay and limestone in the subsoil.

The grape harvest is done by hand with control and selection. A third of the grapes macerate whole with the stems and panicles and 2 thirds of the grapes are destemmed. This process takes 40 days. The resulting wine is checked and tasted daily. During maceration and temperature-controlled fermentation at 25°, the wine is gently pumped (into other containers) to achieve a gentle extraction of the tannins. The aging of this organic wine in French oak barrels lasts 14 months.
