The Sotero Pintado Clarete sobre Lias is a wine like the one my grandfather Aurelio once made, says his grandson Sotero . The grapes come from one vineyard, red and white, which were grown together, ripened, harvested and pressed at the same time.
The word Clarete has its origins in Bordeaux when the influence of England was great there and very light wines were called "Claret".

 

Organic wine profile

Organic winemaking Sotero Pintado Clarete sobre Lias, IGP Castilla y Leon

60 years ago, when the plot from which the grapes for this wine came, it was not uncommon to have white wine and red grape varieties that had the same ripeness were planted next to each other. In this case it was the varieties Garnacha, Garnacha gris, Tempranillo and Viura.

They were harvested by hand in the early morning at a still low temperature, transported to the winery in 15 kg boxes and stored checked again on a sorting table and, if necessary, the less good grapes and berries are sorted out. This is the only way to protect the grapes from oxidation and to produce pure wines in terms of smell and taste.

The grapes are pressed very slowly, whereby the skins of the red berries release some of their red dye and combine with the white juice mixed. This juice then rests for 24 hours at a cool 11° C, during which the juice clears itself as the solid components settle out and are left behind when the must is decanted.

Fermentation of this clean must takes place in new French oak barrels at a controlled temperature.

After fermentation, the wine remains in the same barrel with its lees for 10 months, depending on its taste the yeast is mixed. After a rest period of 4 months in the bottle, the wine refines and reaches its initial drinking maturity.
