By comparison, German winegrowers are allowed to harvest up to 100 hl / hectare for so-called quality wines (QbA). The different grape varieties are not harvested at the same time due to the different maturity. The maceration / fermentation lasts 3 to 4 weeks each. Only after the fermentation has been completed are the wines of the individual grape varieties combined, depending on their quality, into a harmonious blend and matured in stainless steel tanks.
