Organic wine - profile

Château Moulin à Vent, Moulis AOP, red, organic wine production

6,666 vines/hectare of the varieties Merlot, Cabernet Sauvignon, Cabernet Franc and Petit Verdot thrive on clay and calcareous soil, on the higher plateau The soil is calcareous and covered with alluvial gravel from the Pyrenees. The vineyards here are managed organically. Multiplied by 22 hectares of vineyards, there are a total of 146,652 vines that have to be cut, tied and handled manually several times a year. The grape harvest is also done by hand in the vineyards of the Château Moulin à Vent. This way the vineyard worker walk several hundred kilometers in the vineyards during a year.

The actual winemaking begins with a light crushing of the grapes to prepare the mash in which the berries macerate and begin to ferment. This happens in several small, temperature-controlled stainless steel tanks separated by grape variety, which are ripened and harvested at different times.

75% of the resulting organic wine matures in barriques, a third of which are new barriques. The remaining 25% of the wine matures in stainless steel tanks.
