Organic wine profile

• Color: deep red
• Nose: smelling of ripe, fruity currants and mulberries with a hint of cedar wood.
• Mouth: Beautifully ripe to drink, full-bodied ripe red and black fruits on the palate, a round, ripe tannin that gives it structure and a gives a long aftertaste.
• Drinking recommendation: serve now when it is optimally ready to drink at 16°C.

With soils on a limestone plateau, the Côtes de Castillon appellation has similar good external conditions as Pauisseguin Saint Emilion, on which The Merlot grape variety produces particularly good wines. The location, only 13 km from Saint Emilion, promises a good purchase where the wines cost significantly more.  

The grape harvest is carried out by machine (that explains the low price). Everything else follows the usual procedures in Bordeaux. The skins of the grapes are slightly damaged in a grape mill so that their juice can flow out. The berries and juice macerate together in it. The subsequent fermentation at a controlled temperature takes around 2 to 3 weeks, depending on the grape variety. After fermentation is complete, the wine is transferred to other tanks and barriques, where the wine ages for up to 24 months.
