Fino Tinto, that's what the grape variety has been called for centuries in Castilla y Leon, because it actually produces fine wines, as you can see from this landmark of a wine, the Bodega Sotero Pintado TOTEM

 

Organic wine profile

  • Colour: shiny, intense cherry red
  • Nose: The scent is opulent and intensely characterized by ripe, red and black wild berries, notes of violets surrounded by the sweet ripe aromas such as Vanilla, licorice and leather that come from the French barriques.
  • Mouth: gentle on the palate, almost sweet although its residual sugar content is very low, it fills the mouth with diverse and refined aromas and taste variations . The silky-smooth tannins and the delicate acidity caress the palate until an endlessly long finish.
  • Drinking recommendation: at 16 to 18° C you can of course enjoy it with tasty dishes or just concentrate on wine and retreat into a quiet corner.

The grapes come from root real vines that were planted after the onset of the phylloxera plague and, miraculously, did not come from it like almost all vines in Europe were destroyed. Some of them are now as thick as tree trunks. On the stony soil in the El Labajo vineyard, they stand in bushes far apart from each other and drive their roots deep into the soil, where they can still absorb moisture and dissolved minerals despite the dry and hot climate.

These high-quality grapes are harvested by hand, transported to the winery in 15 kg boxes and carefully processed before mashing and fermentation controlled and selected. Fermentation occurs spontaneously with the grapes' own yeasts and takes about 20 days. The wine then matures for 8 months in French barriques and at least another 8 months in the bottle before it is allowed to leave the Bodega Sotero Pintado.
