Paraje (the place, vineyard) called Dondellas is a unique vineyard in the foothills of the Sierra de Gredos, between El Barraco and the Bourguillo reservoir. It is located at an altitude of 850 m and was planted with vines in 1943. Although they only produce a small harvest of grapes, they are of excellent quality, which is impressive in the red organic wine Sotero Pintado Paraje Dondellas.

 

Organic wine - profile

  • Color: Ruby red color with a very bright and clean middle layer.
    Nose: Aromas of fresh red fruits with floral notes.
  • Mouth: In the mouth it is supple and fresh, with a very fine tannin, elegant acidity and long finish.
  • Drinking recommendation: It is recommended in its first 3-4 years Let it breathe in a carafe or glass for 30 minutes. Serve it at 16-18° C with game, game birds and mature cheeses.

It's actually nothing new that good grapes are needed to make good wines. Nevertheless, it often happens that good agronomists do everything in the vineyard to produce good grapes, which is why they work hard for almost a whole year, but then mistakes happen during winemaking that a sensitive and experienced oenologist cannot make. Sotero Pintado, a small, young winemaker who grew up with vines and wine and who has full training as a winemaker, can avoid them.

And this is how Sotero Pintado goes about making this wine:
The grapes are harvested manually and brought to the winery for further processing in small boxes so that the grapes are not crushed and do not oxidize. 30% of the grapes go into the mash as whole bunches, including their panicles, and 70% of the grapes are freed from them, so that only the berries macerate in the mash and begin to ferment spontaneously with the grape's own yeasts in a concrete tank at a controlled temperature. At higher fermentation temperatures, the fine fruity aromas of the grapes would be lost. After alcoholic fermentation is complete, the wine is racked, which means it is transferred to another tank, leaving the solids behind. Malolactic fermentation begins in the new tank at a slightly higher temperature, during which the malic acid contained in the wine is converted into lactic acid. Now the wine needs rest to mature so that its original fruity aromas can fully develop and ripening aromas are added through contact with lightly toasted French oak barrels. Sotero Pintado uses 500 liter barrels because the smaller contact surface means they have less of an impact on the wine than barriques with a capacity of 225 liters.
