The Cabernet Sauvignoin and Merlot grapes come from the La Vieja vineyard of Pago Finca Élez at an altitude of 1,080 m.< br /> The soil in this vineyard dates back to the Mesozoic era and is over 66 million years old. It consists of sandy clay with clay and limestone in the subsoil.

The grape harvest is done by hand with control and selection. The harvest quantity is 6,000 kg for Cabernet Sauvignon and 6,500 kg for Merlot per hectare. This results in approximately 4,200 l or 4,450 l of wine per hectare. A total of 21,000 bottles of this wine were produced.

The following winemaking steps are carried out separately according to grape varieties and vineyard location: maceration and pre-fermentation for 4 days at 14 ° C. The actual alcoholic fermentation lasts 21 days at a maximum temperature of 25 ° C. The malolactic fermentation takes place in Berton tanks. The final step is the development or maturation of the wine and the combining of the individual varietal wines into a harmonious cuvée. 25% of the Cabernet Sauvignon matures for 12 months in French barriques and 75% for 10 months in concrete tanks. Of the Merlot, 1 third matures for 9 months in 300 liter French oak barrels and 2 thirds in concrete tanks. This approach tells us that this organic wine wine is not characterized too much by the wood, but rather its fruity components are in the foreground.
