Nose:The nose reveals aromas of quince paste and orange peel.
Mouth: The mouth is dense, full and the finish is long.
Recommendation: Serve these Sauternes at 12-14°C at the end of a sophisticated dinner with a blue cheese such as Roquefort or Stilton, where salty and sweet flavors stand side by side. It also goes well with chocolate cake or apple pie. Due to the dubious production method, I would hardly dare recommend it with goose liver or foie gras outside of France.
Biodynamic wine preparation Château Grillon, Bordeaux Sauternes AOC, white
The 50-year-old vines are grown and cared for according to the biodynamic rules of Demeter, taking cosmic influences into account. The grapes are then harvested manually depending on the degree of ripeness and fermented at a controlled temperature using the yeasts present in the grapes in barriques and concrete tanks. This noble, sweet biodynamic white wine then matures for a few months in stainless steel tanks.
